I’d perhaps let the author get away with ‘plant based’, but since the author is a carnist it is clear she does not really understand veganism and really, I see the positioning of this book as trying to jump on the ‘vegan’ bandwagon without putting the effort in and seeing ‘vegan and vegetarian’ as separate but ‘two sides of the same coin’.
Whilst I am more than partial to than a plate of gravy-drenched roast potatoes, I shy away from Sunday cooking as I fear the faff that inevitably accompanies it: the setting of multiple timers on my phone, the piles of washing up, the million ingredients and – worst of all – the last minute juggling act of ‘oh-god-I’ve-lost-the-oven-mit-and-forgotten-the-peas-and-now-the-chicken-is-overdone-why-oh-why-didn’t-we-get-Nandos-instead’.
Having read through the ‘quick’ recipes too I think they can be pulled together in that time also (which puts a lot of other cookbooks to shame – looking at you ‘Bosh boys’ and your ‘quick and easy’ recipes). Each chapter also includes a helpful infographic for how to build you own roasting tin dinner using whatever is in your fridge tonight. I had been looking forward to making the recipe ever since I clocked eyes on it, but on the evening marked for making said recipe, my rather wayward life got in the way.
A book with tons of amazing ideas, and for which you really just need a single tin you can put in the oven. The Roasting Tin has recipes for 75 delicious one dish dinners ranging from chicken traybakes to supergrains. The structure of the book contains the recipes suitable for vegans at the front and the vegetarian ones at the back (so I helpfully could rip out and burn the back half of the book lol). I rarely cook *from* them; the contents just marinate away in my head and eventually form themselves into dishes all of their own accord.With her signature fidelity to ease and accessibility, Rukmini presents 75 brand-new recipes that can all be made in standard baking tin formats. We actually used two tins for this as the wings take up rather a lot of space, but transferred them to one for a final more impressive photograph.
